A flaky puff pastry strudel filled with apples, almonds, raisins, and warm spices. Perfect served warm with custard, vanilla ice cream, or a dusting of icing sugar.
Ingredients
- 2 sheets puff pastry (thawed to room temperature)
- 2 large apples, peeled, cored, and diced
- ½ cup sliced almonds
- ½ cup breadcrumbs
- ½ cup raisins
- 3 Tbsp brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla extract
- ½ tsp ground nutmeg
- 1.5 cups water
- Optional: egg wash or melted unsalted butter for brushing
- To serve: vanilla ice cream or custard, icing sugar for dusting
Method
1. Prepare the apples
Place diced apples and water in a saucepan and bring to a boil. Cook for 2–4 minutes until softened. Strain and allow to cool to room temperature.
2. Prepare the pastry
Lay pastry sheets side by side, overlapping by 1 cm. Press gently with a fork to seal into one long sheet.
3. Make the filling
In a bowl, combine the cooled apples with almonds, breadcrumbs, sugar, raisins, vanilla, cinnamon, and nutmeg.
4. Assemble the strudel
Spread the mixture evenly along the centre of the pastry. Fold one side of the pastry over the filling, then fold the bottom over the top to form a log. Seal edges and prick the top with a fork every 2–3 cm. Brush with egg wash or melted butter if desired.
5. Bake
Place the strudel on a baking tray lined with baking paper. Bake in a preheated oven at 180°C for about 25 minutes, until golden and crisp.
6. Serve
Dust with icing sugar and serve warm with vanilla ice cream or custard.
