Serves: 4-6

Ingredients

  • 2 cups finely sliced small bok choy
  • 2 cups grated carrot
  • ½ cup sultanas
  • ¼-½ cup pumpkin seeds
  • ¼ cup chopped mint or coriander
  • 2 spring onions, finely sliced

Dressing

  • 1 red chilli, finely chopped
  • 2 tsp sugar
    freshly ground black pepper, to taste
  • ¼ cup rice vinegar
  • 3 Tbsp fish sauce

Instructions

  1. Place bok choy, carrot, sultanas, pumpkin seeds, mint and spring onions in a bowl.
  2. Place dressing ingredients in a jar with a lid and shake well.
  3. Pour the dressing over the slaw ingredients and toss well. Chill and serve.
