Ingredients

  • 6-8 baby fennel (or 1-2 large fennel)
  • ½ cup carrot juice
  • ½ cup orange juice
  • 1-2 Tbsp julienne (matchsticks) carrot

Instructions

  1. Preheat oven to 180°C.
  2. Trim leaves from fennel and place bulbs in a baking dish.
  3. Add the carrot and orange juice.
  4. Place in preheated oven and cook for about 20 minutes or until fennel is tender.
  5. Serve sprinkled with carrot julienne and a little of the sauce.
