Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp salt
  • 2 eggs
  • ½ cup oil
  • ½ cup sugar
  • 1 ½ cups grated carrot
  • ½ cup chopped walnuts

Cream Cheese Frosting

  • ½ cup cream cheese
  • 2 Tbsp icing sugar
  • Dash lemon juice

method

  1. Mix dry ingredients.
  2. Whisk wet ingredients, fold in.
  3. Stir in carrot and walnuts.
  4. Bake 35–40 minutes at 180°C.
  5. Pipe cream cheese frosting in swirls on cooled cake.
