1. Add olive oil and onions into a medium heated pot and sauté 2-3 minutes. Then add carrots and garlic and sauté for an additional 3-4 minutes.
2. Add cubed chicken breast and stir for about 5 minutes until chicken is coated properly.
3. Add diced tomato and diced capsicum and stir for a few minutes.
4. Add potatoes and herbs and stir in 250ml of tomato puree. Add salt and pepper.
5. Add 1L of water, 3 bay leaves, 2 Tbsp of paprika powder and bring to boil.
6. Cook on a medium heat for about 45 minutes until the potato is soft.
