Ingredients

  • 100g fish
  • 100g cucumber (trim and cut into 5mm square)
  • 10ml lime juice
  • 10ml lemon juice
  • 20g shallot onion (diced)
  • 5g red chilli
  • ½ tomato (flesh only, diced)
  • 10g spring onion (chopped)
  • 5g coriander leaves (chopped)
  • 30ml coconut cream

Instructions

  1. Thinly slice the cucumber.
  2. Souse with apple vinegar, sea salt and sugar.
  3. Into a metal bowl mix together diced fish, lime juice, lemon juice, diced shallot onion, red chilli, diced tomato flesh, chopped coriander and chopped spring onions.
  4. Add a touch of salt and pepper, then mix together.
  5. Add coconut cream. Mix again and enjoy.
