Risotto Dalmatino

Recipe: Risotto Dalmatino

Serves: 2

Ingredients

  • 200g seafood mix (squid, octopus, prawns, shrimp,clams,mussel and anchovies)
  • 1 medium sized onion diced
  • 2 garlic cloves diced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 small chilly sliced
  • 1 tsp smoked paprika
  • 50g olives
  • 25g capers
  • 3 Tbsp olive oil
  • 100ml white wine
  • 2 cups fish stock
  • 1 cup tomato puree
  • Salt and pepper
  • 1 cup arborio rice 

Instructions

1. Sauté onion
In a medium saucepan heat the oil, add onions and fry until soft.
2. Add seafood 
Fry seafood and stir gently.
3. Add flavour and veggies
Add a touch of wine, stir and add garlic, carrots and celery.
4. Seasoning
Sauté for 2-4 minutes then add chilly, paprika, salt and pepper.
5. Pour more wine
Stir and add wine. Simmer for 2-3 minutes.
6. Mix the rice
Add rice then stir and simmer for 5-6 minutes on a low heat.
7. Add the remaining ingredients
Add tomato puree, olives, capers and fish stock, stir and cover.
8. Stir constantly
Cook on the low temperature, stir constantly adding more water if needed until rice is soft and cooked.
9. Garnishing
Garnish with mussel and clams shells, whole prawn or caviar if desired.
