Recipe: Roast pumpkin and potato with paprikaBy Content Team Saturday September 30, 2023 3 minutes to read Recipe by potatoes.co.nz, a not-for-profit organization Beginner Difficulty: EasyReady In: 45 MinutesServes: 4 Ingredients ¼-½ tsp paprika¼-½ tsp curry powder2 Tbsp flour2 Tbsp vegetable oilPinch salt, freshly ground black pepper, to taste400g pumpkin, peeled and sliced into chunks (can use kumara as well)4-6 roasting potatoes, washed and sliced into wedges Instructions Preheat oven to 200°C.Place oil in a roasting pan and place in oven to heat.Place paprika, curry powder, flour, salt and pepper in a bowl.Add pumpkin and potatoes and toss to coat.Remove roasting pan from the oven, and carefully add the vegetables. Toss and return to the oven.Bake in preheated oven for 25-35 minutes or until golden brown and crisp.Turn several times during cooking.Remove from oven and serve.
