Using a blender, place the garlic into the mixer along with the olive oil.
Blend a medium speed for 20 seconds, scrap down the garlic.
Turn on again and add the pine nuts, mix until pureed.
Add the rocket salad leaf and continue to puree.
Add the lime juice, then the parmesan cheese.
Lastly add a touch of salt and white pepper. Do not add much as the parmesan cheese is salty and the rocket salad is peppery.
