Recipe: Vegetable and Chicken One Pot MealBy Content Team Wednesday May 11, 2022 3 minutes to read Recipe by potatoes.co.nz, a not-for-profit organization Beginner Difficulty: EasyReady In: 30 MinutesServes: 4 Ingredients 1 Tbsp vegetable oil1 onion, peeled and finely chopped1 clove garlic, peeled and crushed2 courgettes, thickly sliced2-4 skinless chicken breasts, diced2 large carrots, peeled and roughly chopped1 cup sweet corn kernels4 medium boiling or new potatoes, washed and diced1¼ cups chicken stock1 handful herbs – thyme, coriander and parsleyhalf head broccoli, sliced into florets Instructions Heat oil in a large heavy-based frying pan or a pot.Add onion, garlic, courgettes and chicken and stir fry for 4-5 minutes.Add carrots, corn, potatoes, stock and herbs. Bring to the boil, cover, reduce heat and simmer for 15-20 minutes until potatoes are cooked.Add broccoli and cook a further 3-4 minutes.Serve in deep bowls and enjoy alongside some bread.
