Ingredients
For the Fritters
- 200g golden kumara
- 200g carrots
- 200g celeriac
- 300g agria potatoes
- 200g red onion
- 25g garlic paste
- 10g green chili, finely chopped
- 10g parsley, finely chopped
- 300g lemon chickpea flour
- 150g cornflour
For the Apple Chutney
- 200g green apples (Granny Smith), peeled and diced slightly larger than brunoise
- 12g glucose (or 24g sugar if glucose is unavailable)
- 12g sugar
- hint of cinnamon powder
- 1g vanilla essence
Instructions
Vegetable Fritters
1. Prepare the Vegetables
Cut the kumara, carrots, celeriac, potatoes, and red onion into thin matchstick-like strips.
2. Blanch
Blanch the vegetables until al dente (firm but cooked). Drain well and set aside.
3. Mix ingredients
Combine the blanched vegetables, garlic paste, green chili, parsley, chickpea flour, and cornflour in a mixing bowl. Mix thoroughly until the ingredients bind together.
4. Shape the Fritters
Portion the mixture into 60g balls and flatten them slightly to form patties.
5. Fry
Heat a deep fryer to 180°C. Fry the fritters until golden brown and crisp. Drain on paper towels to remove excess oil.
Apple Chutney
1. Combine ingredients
Place the diced green apples, glucose (or sugar), cinnamon powder, and vanilla essence in a saucepan.
2. Cook
Simmer the mixture over low heat, stirring occasionally, until the apples are tender and the chutney has thickened slightly.
Serve
Place the warm vegetable fritters on a plate and serve alongside the apple chutney for dipping. Enjoy this flavorful combination of crispy fritters with a tangy, spiced chutney!
