Recipe: Bok choy, Capsicum and Beef Stir Fry

Ingredients

  • 500g stir fry beef
  • ½ Tbsp olive oil
  • 3 bok choy, white and green parts separated and sliced
  • 2 red capsicum, deseeded and sliced
  • 2 Tbsp cashews
  • 2 Tbsp orange juice
  • 1 Tbsp lite soy sauce

Instructions

  1. Add a little olive oil in a heavy-based pan.
  2. Add beef in batches and stir fry until cooked. Remove each batch from the pan and keep warm.
  3. Add oil to the pan, heat to sizzling, then add white parts of bok choy to the pan and stir fry until tender.
  4. Add red capsicum, green parts of bok choy and cashews and stir fry until the bok choy has wilted.
  5. Return beef to the pan and stir fry until heated through.
  6. Mix orange juice and soy sauce together and drizzle over the stir fry.
  7. Serve with brown rice or quinoa.
