Ingredients

  • 2 stalks celery, thinly sliced on the diagonal
  • ½ cucumber, deseeded, thinly sliced
  • ¼ prince or rock melon, peeled, deseeded, sliced into chunks
  • Optional (small apple and pomegranate seeds)

Dressing:

  • 1 tsp lemon juice
  • 1 Tbsp lite olive oil

Instructions

  1. Mix celery, cucumber and melon together in a bowl.
  2. Pour dressing over the salad before serving. Season to taste.

Dressing: Blend lemon juice and olive oil together.
