Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup sugar
  • 2 eggs
  • ½ cup olive oil
  • ½ cup milk
  • Zest of 2 lemons
  • 1 tsp chopped rosemary

Glaze

  • ½ cup icing sugar
  • Juice of 1 lemon

Method:

  1. Mix dry ingredients.
  2. Whisk wet, fold into dry.
  3. Bake 35–40 mins at 180°C.
  4. Drizzle lemon glaze. Garnish with candied rosemary.
