Ingredients

  • 1 cup plain flour
  • 1 cup polenta
  • ½ cup ground almonds
  • 1 tsp baking powder
  • 3 eggs
  • ½ cup oil
  • ¾ cup sugar
  • Zest and juice of 2 oranges

For the glaze

  • ½ cup icing sugar
  • 2 Tbsp orange juice

Method

  1. Mix dry ingredients.
  2. Whisk wet, fold into dry.
  3. Bake 35–40 minutes at 180°C.
  4. Brush with citrus glaze while warm.
