2 cups silverbeet leaves and stalks, finely sliced and kept separate
1 cup frozen peas
2 kumaras, red and orange, cooked and diced, to sprinkle over the dish
1-2 Tbsp chopped fresh parsley, to garnish
Instructions
Heat oil in a large saucepan.
Add onions and cook gently until soft.
Add mince and stir fry until brown.
Add stock powder, grated kūmara, tomatoes, silverbeet stalks and water.
Cook for 10 minutes then add silverbeet leaves and peas and cook for a further 5 minutes.
Serve with cooked diced kūmara and parsley.
