Serves: 4

Ingredients

  • 1 Tbsp olive oil
  • 1 onion, peeled and finely chopped
  • 500g beef mince
  • 1 tsp stock powder
  • 2 cups grated kūmara
  • 400g can tomatoes, or 4 fresh tomatoes, chopped
  • 2 cups water
  • 2 cups silverbeet leaves and stalks, finely sliced and kept separate
  • 1 cup frozen peas
  • 2 kumaras, red and orange, cooked and diced, to sprinkle over the dish
  • 1-2 Tbsp chopped fresh parsley, to garnish

Instructions

  • Heat oil in a large saucepan.
  • Add onions and cook gently until soft.
  • Add mince and stir fry until brown.
  • Add stock powder, grated kūmara, tomatoes, silverbeet stalks and water.
  • Cook for 10 minutes then add silverbeet leaves and peas and cook for a further 5 minutes.
  • Serve with cooked diced kūmara and parsley.
