Ingredients

  • 250g pack snow peas
  • 1 Tbsp Extra virgin olive oil
  • 1 spring onion, finely sliced
  • 12 small mint leaves, washed
  • zest from 1 lemon

Instructions

  1. Slice the stalk end off the snow peas.
  2. Wash and place on a platter.
  3. Drizzle with olive oil.
  4. Add spring onion and mint leaves, and top with lemon zest.
  5. Serve and enjoy.

Variation: Use sugar snap peas instead of the snow peas.
