Ingredients

  • 1 tsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, peeled and crushed
  • 2 Tbsp medium curry paste or 1 Tbsp medium curry powder
  • 4 medium boiling or new potatoes, skin on and cut into small cubes
  • 3-400g cauliflower, cut into small florets [approx ¼ cauliflower] 1 x 400g can chopped tomatoes
  • 1¼ cups beef stock
  • 1 Tbsp fresh coriander, roughly chopped
  • 1 handful baby spinach

Instructions

  1. Heat oil in a large heavy-based saucepan.
  2. Add onion and garlic and stir fry for 1-2 minutes.
  3. Add curry paste or powder and stir fry for 1 minute.
  4. Add potatoes and cauliflower and mix, stir frying for 1-2 minutes.
  5. Add tomatoes and stock, bring to the boil, cover, reduce heat and simmer for 15-20 minutes or until the potatoes are soft.
  6. Stir through coriander and spinach and serve.
