Preheat the oven to 180 degrees celsius. Line sheet pan with baking paper.
2. Add butter, brown sugar and granulated sugar
In a stand mixer, beat butter, brown sugar and granulated sugar until creamy.
3. Add egg and vanilla extract
Mix them well until combined.
4. Add flour and oats
Add them bit by bit. Be careful not to overmix.
5. Roll into small balls
Roll into 2-inch spheres and space them about 2 inches apart.
6. Baking time
Bake for 12 minutes until the top begins to turn golden brown.
7. Cooling
Let it cool for a few minutes then transfer to the wire rack.
8. Enjoy!
