  • 2 tomatoes, finely diced
  • ½ red capsicum, finely diced
  • 2 cups finely diced pineapple, fresh or drained, canned pineapple
  • 2 spring onions, finely sliced
  • ½ cup chopped fresh coriander
  • 4 tsp lemon juice
  • 2 Tbsp olive oil
  • 500g fish fillets
  • 2 cups finely sliced lettuce
  • 4 large wraps


  • Preheat the oven grill.
  • Place tomatoes, capsicum, pineapple, spring onion, coriander, lemon juice and oil in a large bowl and refrigerate until ready to serve.
  • Place fish fillets on a paper-lined baking tray and place under the hot grill. Turn once and continue to grill until the fish is cooked through.
  • Place each wrap on a plate, divide the lettuce among them, top with grilled fish and pineapple and tomato salsa.
  • Roll up and serve.
