Ingredients

  • 2 cups flour
  • 1¼ cup castor sugar
  • 1 pinch salt
  • 2 tsp baking powder
  • ½ cup pistachios, roughly chopped
  • 4 dried figs
  • ⅛ cup rose water
  • 3 large eggs
  • ¾ cups olive oil
  • ½ cup Greek yogurt

Instructions

1. Preheat the oven at 175 degrees Celsius.

2. In a medium sized bowl, whisk together sugar and eggs until creamy.

3. Then add oil, Greek yogurt and rose water.

4. In a separate bowl mix flour, salt and baking powder.

5. To the liquid mixture add the dry ingredients, little by little, and whisk to avoid lumps.

6. Once everything is combined, fold in pistachios and figs.

7. Transfer into a loaf pan, cover the top with aluminum foil and bake for 45 minutes or until the skewer comes out clean. If you do not cover the loaf pan while baking, the top will bake first and the loaf will remain uncooked on the inside. To get a nice golden brown color, you can remove the foil for the last 5-6 minutes of baking.

8. Serve warm with tea or coffee.
